What follows is Grandma DelCarlo's recipe for Biscotti:
1 cube soft butter
8 T shortening
1.5 c sugar
Blend until smooth and creamy.
4 eggs (add to cream, one at a time)
1.5 t vanilla
1.5 t anise extract
Mix in
4 c flour with 1.5 t of baking powder and 1 t salt
1 cup coarsely chopped almonds
Form dough into 2 flat loaves on greased baking sheet (you maybe able
to make 3 flat loaves -- dimensions 3 inches wide x 12 inches long by
0.5-0.75 inches thick).
Bake in 350 degree oven for 15-20 minutes. The bottom should begin to
brown and the dough should be firm.
Remove from oven and cut each loaf into diagonal strips (may 15-20 per
loaf); return to pan placing each cookie on its side.
Bake 5-10 minutes. You want to toast the cut edges. Toast both sides
for crispy cookies and one side for softer ones.
